Classic Chicken Soup

Mmmmm… chicken soup.   It has long been a staple meal for families during the cold winter months providing welcoming relief from the brisk temperatures.  It has also been a favorite ‘comfort food’ for moms to prepare for their families when cold and flu season hits.   But, did you know that food as medicine has long been practiced since the ancient times of Hippocrates?  And recently, research at the UCLA School of Medicine and Mount Sinai Medical Center in Miami Beach showed that chicken soup was effective in clearing nasal passages and acting as an expectorant?  So, the next time someone in your family comes home with the sniffles cook up a batch of good old Classic Chicken Soup.

Ingredients ¼ tsp salt (optional)
¼ tsp pepper

1 clove garlic, minced
2 sprigs rosemary
1 tsp parsley
3 cups water
2 cups chicken broth

4 stalks celery
4 large carrots
2 peeled medium, potatoes
½ cup egg noodles (optional)
2 large skinless, boneless chicken breasts
 1 lemon (optional)
Directions Boil chicken in 3 cups water until tender.  While chicken boils, cut vegetables into bite sized pieces. Set aside. Remove chicken from water and let cool.  Do not throw water out.   Shred chicken and set aside.  In pot with water, add two cups chicken broth, herbs, seasoning, shredded chicken and potatoes.  Simmer for 30 minutes.  Add carrots and celery; continue to simmer for 20 minutes.  Add noodles; simmer for an additional 10 minutes.  Serve hot.  For a kick, squeeze 4-5 drops of lemon in your soup.  Delicious!Serves 4

Moms Night, after the Oscars

The awards have been given, the red carpet rolled up and the glitz and glam returned to the safety of their designers.  Now, is the perfect time to indulge in “Moms Night, after the Oscars”.  Choose the Oscar winning movie you’ve most wanted to see but haven’t found the time, invite a few friends over, and open a bottle (or two) of wine.  Set the mood with an array of cheeses, breads and fruit and kick off your heels.  We’re sharing with you some tips on how to choose that perfect combination of wine, cheese and food for the perfect “after the Oscars” gathering or anytime. 

To share this experience with your children, include sparkling cider for them and choose a family friendly movie like Ratatouille or Enchanted.  

·         Blue Cheese: tangy ripe and earthy
Wine: Cabernet Sauvignon, Port, or Zinfandel
Food : Figs, pears, walnuts, fruit and nut breads

·         Cheddar Cheese: mild to shard, tangy and robust
Wine: Gewurztraminer, Riesling, Merlot
Food: Red or green apples. Grapes, cherries, cashews, dark breads

·         Gouda Cheese: Mellow rich caramel
Wine: Riesling, Fruity Zinfandel, Merlot
Food: Red apples, toasted almonds, dark bread

·         Brie Cheese: Creamy, rich -and buttery
Wine: Sparkling wines, Chardonnay, Medium Bodied Pinot-Noir
Food: Green apples, strawberries, pears, toasted walnuts, crusty bread

·         Mozzarella Cheese: delicate and creamy
Wine: Chardonnay, Sauvignon Blanc, light bodied Pinot Noir
Food: Olives, tomatoes, roasted red peppers, crusty bread
